No-Oil Almond Ginger Dressing

Benjy makes this from-scratch dressing with no added oil, thus cutting down on fats. All fresh ingredients, mostly raw, and refreshing with a little sweetness.

Ingredients
  1. 1 cup water (or more)
  2. 1/2 cup unsweetened soy, hemp or almond milk
  3. 4 tablespoons tahini or unhulled sesame seeds
  4. 2 small cloves garlic or 1 medium clove garlic
  5. 1 inch piece fresh ginger, peeled
  6. 1/2 cup raw almonds
  7. 6 dates, pitted
Instructions
  1. Place all ingredients into Vitamix in order listed. Blend until smooth; roughly 2-3 minutes. Add more water if a thinner consistency is desired. Chill.
