Mango Gazpacho

I flat out lifted this from a Whole Foods recipe. But, they nailed it. I was doing a show today, and the girl doing the demo of this recipe offered me some. I was under the impression that gazpacho was just boring cold tomato soup. This was anything but. AWESOME. Bursting with flavor, and could have been a whole meal. And, they made it in a Vitamix!

Ingredients
  1. • 2 cups ripe tomatoes
  2. • 1 cup mango
  3. • 1 cup cucumbers
  4. • 1/4 cup red onion
  5. • 1/4 cup red bell pepper
  6. • 1/4 cup jalapeno (optional)
  7. • 1/4 cup cilantro
  8. • 2 cloves garlic
  9. • 1 tbsp salt
  10. • 1/4 cup extra virgin olive oil
  11. • 1/4 cup apple cider vinegar
Instructions
  1. Rough chop all vegetables. Put all of the soup ingredients in blender and blend until smooth. Taste for salt and adjust if needed.
