Garden Fresh Marinara Sauce
Serves 2
Simple, delicious, and nutrient-dense marinara sauce recipe. Add to pasta or strips of zucchini or spaghetti squash.

Ingredients
  1. 1 tbsp olive oil
  2. 5 Roma tomatoes
  3. 1 small onion, quartered
  4. 1 clove garlic
  5. 1 tbsp fresh basil
  6. 1 tbsp fresh oregano
  7. 1/2 tsp salt
  8. 1/4 tsp pepper
  9. 1/4 cup spinach (optional)
  10. 1/4 cup kale (optional)
Instructions
  1. Set aside 2 tomatoes. Place all other ingredients in Vitamix container in order listed. Place lid on container and start at Variable speed #1. Turn on machine and quickly raise speed to #10 and switch to High. Run 3-4 minutes or until sauce is steaming hot. Switch machine to Variable and lower to #5 speed. Drop in remaining 2 tomatoes and blend for 8-10 seconds until chopped. Serve immediately.
Notes
  1. Spinach and kale are for added nutrients and vitamins. You can also add carrots, squash, etc.; any mild vegetables. Add them at the beginning for a smooth sauce (but slightly lower nutrient content); add them at the end for texture and taste (and more nutrients).
