Ingredients
  1. 1 scoop chocolate protein powder (your choice, but I recommend Vega One)
  2. 1 tbsp flax seeds (whole) or chia seeds
  3. A couple shakes of cinnamon
  4. 1/2 banana (no peel)
  5. Fistful of blueberries (frozen or fresh)
  6. Fistful of fresh kale (appr. 1/2 cup)
  7. 1/2-1 cup water (or coconut water)
  8. 3-5 ice cubes
  9. 1 tsp honey or agave (optional)
  10. 1 tbsp almond or peanut butter (optional)
Instructions
  1. Place everything in Vitamix and replace lid. Blend on high for 45-60 seconds. Serve immediately.

  1. I had one this morning.

Ingredients
  1. 3 tbsp vegetable or olive oil
  2. 1 lb. celery, roughly chopped
  3. 1/2 cup onion, roughly chopped
  4. 2 1/2 cups vegetable stock
  5. 1 cup low fat buttermilk
  6. 2 medium Russet potatoes, quartered
  7. 3 garlic cloves, roasted, peeled
  8. Salt and freshly ground black pepper, to taste
Instructions
  1. In a stockpot, bring 6 cups of water to a boil. Place potato quarters into water and boil until soft; about 20-25 minutes.
  2. While potatoes are boiling, heat oil in a medium saucepan on medium-low to medium. Sauté celery and onions in oil until softened (about 6-8 minutes).
  3. Add vegetable broth to celery/onion mixture and let simmer for about 25 minutes.
  4. Place all cooked ingredients, buttermilk, garlic, salt, and pepper into the Vitamix container in the order listed and secure lid.
  5. Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High.
  6. Blend for 2 minutes.
  7. Serve immediately.
Notes
  1. To make soup vegan, substitute canned coconut milk for buttermilk and add a little vegan sour cream. Don't use the refrigerated version of coconut milk in the cardboard container; it's not thick enough.

  1. 1/2 cup water
  2. 1/2 cup 2% organic milk (or soy) milk
  3. 1/4 cup raw almonds
  4. 1 scoop protein powder
  5. 1/4 cup tofu
  6. 2 tbsp quinoa (rinsed)
  7. 1/2 ripe banana or 4 strawberries
  8. 1/4 cup spinach
  9. 1 tbsp flax oil, or flax/hemp/chia seeds
  10. 4 ice cubes
Instructions
  1. Place all ingredients into container in order listed. Replace lid. Start Vitamix on 1, then slowly turn dial up to 10, then high. Blend for 45-60 seconds. Serve immediately.
Notes
  1. Given the variations in the different milks and protein powders, it's hard to pinpoint the exact amount of protein in this smoothie. However, it's a lot. If you're eating a balanced diet, you probably won't need this much protein on a daily basis. But once or twice a week, vegetarians/vegans won't hurt from the extra boost.

Ingredients
  1. 2-3 cups water
  2. 2 cups mushrooms; variety of crimini, portobello and shitake or chose one
  3. Trim stems of mushrooms, chop and set aside. Will be used as garnish.
  4. 1/3 cup yellow onion, chopped
  5. 2 cloves garlic
  6. ½ cup cashews, soaked (If you are on a cleanse leave out)
  7. ¼ - ½ cup avocado
  8. 1 ½ cup marjoram or thyme
  9. 1/2 tsp sea salt
  10. 1/4 cup leek, opt
  11. Optional garnish: hot chili oil
Instructions
  1. Place all ingredients into container in order listed. Start on 1 and slowly ramp up to 10, then switch to high. Blend for 3-4 minutes or until soup is warm. Use a meat thermometer to check temperature (ideal goal is 116-120 degrees. Pour into serving bowls and add chopped mushroom stems, chopped parsley and a dash of pepper.
Notes
  1. The directions indicate blending for 3-4 minutes, which will keep the soup "raw." If you would prefer the soup hot, blend for 5-8 minutes.

  1. 6 ounces (170 g) roasted red pepper
  2. 1/2 cup (120 ml) water
  3. 2 tbsp (30 ml) olive oil
  4. ½ cup (120 g) tahini paste
  5. 2 ½ tbsp (38 ml) lemon juice
  6. 2 (6 g) garlic cloves, peeled
  7. 1 tsp hot sauce
  8. 3 cups (720 g) canned garbanzo beans, drained
  9. 1 tsp cumin powder
  10. 1 tsp salt
  11. ½ tsp black pepper
Instructions
  1. Place all ingredients into machine. Switch to ON, then slowly turn variable speed knob from 1 to 10.
  2. Blend for one minute or until smooth. The longer you allow the machine to run, the creamier it will get (up to about 1-2 minutes). If mixture is not moving freely, add a little water (1 tsp at a time) to loosen it up.
Notes

When I was a kid, there was a frozen custard place we used to go to about once a month in St. Louis (where I'm from) called Ted Drewes. The lines went all the way out to the street, and they were known, nationwide, for their decadent desserts. I had my favorites, but my parents always got the same thing; a blueberry banana "concrete." It was the perfect combination of that fresh, summery sweet/tartness from the blueberries and the creamy and sweet thickness from the bananas. During a demo yesterday, I put together a new, healthier rendition that's just as decadent. The bananas add the creaminess without the addition of dairy. This recipe is dedicated to that memory. Ted Drewes (and my folks) would be proud. And the vegetables make it even healthier. Great for kids.

Ingredients
  1. 2 bananas + 1/2 banana, peeled
  2. 1/2 + 1/4 cup blueberries
  3. 1/2 avocado, peeled
  4. 2 baby carrots
  5. 1/8 cup spinach
  6. 1 stalk kale
  7. 1/4 cup agave nectar or honey (or less)
  8. 2 cups ice
  9. (Optional) 1/2 tbsp cinnamon
  10. (Optional) 1/2 cup soy yogurt
Instructions
  1. Place 2 bananas, 1/2 cup blueberries, and remaining ingredients into Vitamix. Slowly ramp up to high speed and run for 1 minute.
  2. Drop speed down to a 2 or 3 and add remaining banana and blueberries through lid opening. Use tamper to push ingredients into blade to chop into bits for texture.
  3. Serve immediately.
Notes
  1. If bananas and blueberries are not getting sufficiently chopped at end, quickly pulse up to 5 or 6 on the variable speed dial, and then immediately back down.
