Ingredients
  1. 1 large carrot
  2. 1 large tomatoes
  3. 1/2 red bell pepper
  4. 1 clove garlic
  5. 1 stalk celery
  6. 1/4 cup watercress
  7. 1/2 cup loosely packed spinach
  8. 1 red jalapeño, seeded (optional)
  9. Additional cool water to thin mixture (optional)
  10. 2-3 ice cubes to chill (optional)
Instructions
  1. Place all ingredients into container and blend on high for one minute. If mixture is too thick, take plug out of lid and, while machine is still on, begin pouring water until desired consistency is reached. Serve immediately. Remaining mixture will keep 1-2 days in sealed container in refrigerator.

Ingredients
  1. 3 pasteurized egg yolks
  2. 1 tablespoon lemon juice
  3. 1/2 teaspoon Chipotle Cholula or Tabasco sauce
  4. 1/4 teaspoon Kosher salt
  5. 3/4 cup canola oil
Instructions
  1. Place eggs, chipotle sauce, salt, and lemon juice into the Vitamix container and replace lid.
  2. Turn to Variable 1, then turn machine on and slowly increase speed to Variable 10. Flip to High and blend for 10 seconds. Lower speed to Variable 8.
  3. While machine is running, remove the lid plug and pour in the oil in a thin, steady stream through the lid plug opening until all is in and mixture has gotten thicker. This should take about 30 seconds.
  4. Stop machine and stir in any oil still sitting on top of the mayo.
  5. Transfer to a separate container and place in refrigerator. Keeps 2-4 weeks.

Ingredients
  1. 1/4 cup water
  2. 6 ounces tequila
  3. 2 ounces Grand Marnier or Triple Sec
  4. 1 orange, peeled and halved
  5. 1 lime, peeled and halved, plus another lime*
  6. 1 lemon, peeled and halved
  7. 6 tbsp agave nectar or raw sugar
  8. 6 cups ice cubes
  9. 1/2 cup salt*
Instructions
  1. (First step: Create salt-rimmed glasses.*)
  2. Place all ingredients into Vitamix container as listed and place lid on. Blend just under a minute, using tamper to push ingredients into blade as necessary. Divide equally into salt-rimmed glasses*.
Notes
  1. *To rim the glasses with salt, you need two things; 1) two containers that are at least 1/2" high that will fit the diameter of the glasses, and 2) another lime. Start by juicing the lime (cut it in half and squeeze into the 1/2" container). Next, pour the salt around the inner edge of the second container.
  2. This process takes two steps. Begin by turning the glass upside down, then dipping it into the lime juice and turning it a few inches either direction. Then lift it straight up. You're essentially creating the "glue" that will hold the salt. After the lime juice, immediately dip the the lime juice-rimmed glass into the salt, turn a couple inches, then lift up. Then immediately turn right-side up.
  3. And keep in mind, do this BEFORE pouring the finished margarita blend into the glass. : )
  4. Additional Note: To release extra juice from the lime, place onto cutting board or countertop and roll back and forth, exerting medium pressure on lime.

Ingredients
  1. 1 tbsp olive oil
  2. 5 Roma tomatoes
  3. 1 small onion, quartered
  4. 1 clove garlic
  5. 1 tbsp fresh basil
  6. 1 tbsp fresh oregano
  7. 1/2 tsp salt
  8. 1/4 tsp pepper
  9. 1/4 cup spinach (optional)
  10. 1/4 cup kale (optional)
Instructions
  1. Set aside 2 tomatoes. Place all other ingredients in Vitamix container in order listed. Place lid on container and start at Variable speed #1. Turn on machine and quickly raise speed to #10 and switch to High. Run 3-4 minutes or until sauce is steaming hot. Switch machine to Variable and lower to #5 speed. Drop in remaining 2 tomatoes and blend for 8-10 seconds until chopped. Serve immediately.
Notes
  1. Spinach and kale are for added nutrients and vitamins. You can also add carrots, squash, etc.; any mild vegetables. Add them at the beginning for a smooth sauce (but slightly lower nutrient content); add them at the end for texture and taste (and more nutrients).
