Ingredients
  1. 2 avocados, ripe
  2. 2 medium bananas, ripe
  3. 6-8 tbsp unsweetened cocoa powder
  4. 1 tsp vanilla extract
  5. 1 tsp cinnamon
  6. 1 tbsp honey, agave, or Stevia
Instructions
  1. Place all ingredients into Vitamix container in order listed and replace lid. Start on 1, then raise speed to 10 and flip to high. Allow ingredients to blend roughly 60 seconds or until smooth. Chill or serve immediately.
Notes
  1. Watch to make sure you don't overblend the pudding. It can get overmixed and start to become chunky if it goes too long. Also, be sure you're using ripe bananas.

Ingredients
  1. 1/2 cup (120 ml) water
  2. 1 cup (240 ml) heavy cream
  3. 1 Tablespoon instant espresso or coffee powder
  4. 3 Tablespoons (24 g) confectioners sugar
  5. 12 ounces (336 g) semi-sweet chocolate, chopped
  6. 2 Tablespoons (30 ml) brandy (optional)
Instructions
  1. Place water, cream, coffee, sugar, and chocolate into the container and snap on the lid.
  2. Switch the Variable Speed to the lowest setting; a "1".
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 3 minutes or until melted and smooth.
  5. Pour into fondue pot and if desired, stir in brandy.
Notes
  1. As far as things to dip into your fondue, try sponge cake, brownie bites, pound cake, sliced apples, sliced pears, strawberries, bananas, and fresh or chunks of pineapple.

When I was a kid, there was a frozen custard place we used to go to about once a month in St. Louis (where I'm from) called Ted Drewes. The lines went all the way out to the street, and they were known, nationwide, for their decadent desserts. I had my favorites, but my parents always got the same thing; a blueberry banana "concrete." It was the perfect combination of that fresh, summery sweet/tartness from the blueberries and the creamy and sweet thickness from the bananas. During a demo yesterday, I put together a new, healthier rendition that's just as decadent. The bananas add the creaminess without the addition of dairy. This recipe is dedicated to that memory. Ted Drewes (and my folks) would be proud. And the vegetables make it even healthier. Great for kids.

Ingredients
  1. 2 bananas + 1/2 banana, peeled
  2. 1/2 + 1/4 cup blueberries
  3. 1/2 avocado, peeled
  4. 2 baby carrots
  5. 1/8 cup spinach
  6. 1 stalk kale
  7. 1/4 cup agave nectar or honey (or less)
  8. 2 cups ice
  9. (Optional) 1/2 tbsp cinnamon
  10. (Optional) 1/2 cup soy yogurt
Instructions
  1. Place 2 bananas, 1/2 cup blueberries, and remaining ingredients into Vitamix. Slowly ramp up to high speed and run for 1 minute.
  2. Drop speed down to a 2 or 3 and add remaining banana and blueberries through lid opening. Use tamper to push ingredients into blade to chop into bits for texture.
  3. Serve immediately.
Notes
  1. If bananas and blueberries are not getting sufficiently chopped at end, quickly pulse up to 5 or 6 on the variable speed dial, and then immediately back down.

  2. 1/2 cup cashews
  3. 1/4 cup cacao powder or nibs
  4. 1 tbsp coconut butter
  5. 2 tbsp agave (or other sweetener)
  6. 1 tsp vanilla extract
  7. 1/2 tsp sea salt
  8. 1/2-1 cup ice (to chill)
  9. Optional: 1/4 cup baby spinach or kale
Instructions
  1. Blend all ingredients in a high-speed blender for 45-60 seconds and serve.
Notes
  1. To make the milk smoother, strain out the pulp through a nut bag.
