Ingredients
  1. 15 ounces canned chick peas (garbanzos), drained
  2. 15 ounces canned chick peas (garbanzos), with liquid
  3. 1/4 cup (35 g) raw sesame seeds
  4. 1 Tablespoon olive oil
  5. 1/4 cup (60 ml) lemon juice
  6. 1 garlic clove, peeled
  7. 1 teaspoon ground cumin
  8. Salt, to taste
  9. Paprika for decoration/taste
Instructions
  1. Place all ingredients into machine and replace lid. Start at Variable 1, then slowly bring up to 10 and high. Using tamper, continuous push all ingredients into blade. You're looking for a smooth, creamy texture. If mixture is not combining, add 1 tbsp of water at a time, then go back to using tamper. Once mixture has reached desired creaminess (1-2 minutes), use a spatula to transfer all hummus to a sealable container, sprinkle on paprika, and transfer to refrigerator. Chill for 2-3 hours before serving. Keeps in fridge up to one week.

Ingredients
  1. 3 pasteurized egg yolks
  2. 1 tablespoon lemon juice
  3. 1/2 teaspoon Chipotle Cholula or Tabasco sauce
  4. 1/4 teaspoon Kosher salt
  5. 3/4 cup canola oil
Instructions
  1. Place eggs, chipotle sauce, salt, and lemon juice into the Vitamix container and replace lid.
  2. Turn to Variable 1, then turn machine on and slowly increase speed to Variable 10. Flip to High and blend for 10 seconds. Lower speed to Variable 8.
  3. While machine is running, remove the lid plug and pour in the oil in a thin, steady stream through the lid plug opening until all is in and mixture has gotten thicker. This should take about 30 seconds.
  4. Stop machine and stir in any oil still sitting on top of the mayo.
  5. Transfer to a separate container and place in refrigerator. Keeps 2-4 weeks.

  1. 3 cups honey roasted peanuts
  2. That's it.
Instructions
  1. Place the nuts into the container and replace the lid. Slowly turn variable speed from 1 to High, then use tamper to continually push down nuts. You will hear a slogging, churning sound, and this is normal. Mixture should go from gritty to smooth within about 45 seconds; keep tamping down until you reach a smooth, creamy consistency. 1 1/2-2 minutes is ideal. Don't go beyond 2 minutes.
  2. Using a long, slender spatula, remove peanut butter from container and place into sealable bowl. Use immediately, or store for up to 1 week.
Notes

  2. Also, clean up on this one is a little tougher. Don't be afraid to use a wet paper towel to loosen as much of the PB as you can as you clean it.

Ingredients
  1. 1/2 cup lite coconut milk
  2. 1/2 cup soft extra-virgin coconut oil
  3. 1/2 cup raw cashew halves
  4. 1/2 teaspoon sea salt
  5. 1/4 teaspoon ground turmeric
  6. 2 tablespoons extra-virgin olive oil
  7. 3½ tablespoons raw apple cider vinegar
Instructions
  1. Blend milk, coconut oil, cashew halves, salt and turmeric on high for 1-2 minutes until smooth and creamy. While Vitamix is still running, slowly the olive oil and vinegar into the top of the container (through the port in the lid). Blend for 1 additional minute, or until oil is nicely emulsified (combined).
  2. Transfer to a medium-sized bowl and refrigerate for 2 hours or longer prior to use.
Notes
  1. Mixture will keep well in refrigerator for up to 7 days, but will continue to get firm because of the coconut oil. If you can't have nuts, replace the cashews with sunflower seeds.

Ingredients
  1. 1/4 cup (60 ml) olive oil
  2. 1/4 cup (25 g) Parmesan cheese*
  3. 2 garlic cloves, peeled
  4. 2 cups (80 g) fresh basil leaves
  5. 1/4 cup (30 g) walnuts (raw or roasted)
  6. 1 teaspoon lemon juice
  7. 1/2 teaspoon salt
Instructions
  1. Place all ingredients in Vitamix container, replace lid, and start machine on lowest setting. Turn up to 10/high, then use tamper to continuously push ingredients into blade for 45 seconds. You're aiming for a paste-like consistency that still has some texture.
Notes
  1. Okay...two things.
  2. 1) If you're going to use Parmesan, don't go cheap. Skip the green plastic can and ask your grocery store or local cheesemonger for a 1/4 lb of a decent quality domestic Parmesan. You can also ask for the grand-daddy of Parmesans, Parmigiano Reggiano. We import it from Italy. It's significantly more expensive and has a much stronger flavor than most domestic parms. You can use it, but expect it to throw off the flavor balance from the other ingredients. If you do use a Reggiano, you match it with with a sharper olive oil. Ask your specialty grocer for help.
  3. 2) You can make this recipe vegan by omitting the cheese and subbing in 1 tbsp of nutritional yeast and 1 tsp of salt. If you're already a fan of nutritional yeast, don't be afraid to add more to taste.

Ingredients
  1. 1/2 cup (120 ml) water
  2. 1 cup (240 ml) heavy cream
  3. 1 Tablespoon instant espresso or coffee powder
  4. 3 Tablespoons (24 g) confectioners sugar
  5. 12 ounces (336 g) semi-sweet chocolate, chopped
  6. 2 Tablespoons (30 ml) brandy (optional)
Instructions
  1. Place water, cream, coffee, sugar, and chocolate into the container and snap on the lid.
  2. Switch the Variable Speed to the lowest setting; a "1".
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 3 minutes or until melted and smooth.
  5. Pour into fondue pot and if desired, stir in brandy.
Notes
  1. As far as things to dip into your fondue, try sponge cake, brownie bites, pound cake, sliced apples, sliced pears, strawberries, bananas, and fresh or chunks of pineapple.
